Walter, if you run iOS and also use a Mac desktop computer, you do not need to be dependent on ZWO. You can manage your own ASIAIR app (.ipa file) version by using a (not free) application for macOS called iMazing.
Each time ZWO releases a new version of the iOS app, you can add that version to the iMazing Library that is kept on the Macintosh. With that, you can later download older versions of the iOS app to your tablet.
You need to keep a copy of the firmware around that is at least as old as the app version that you want to revert to, and allow the app to update it to the firmware that the app version needs. I am not sure how you would do this with the third generation ASIAIR that has the firmware in eMMC storage, though.
Interestingly, iMazing shows that the v1.7 ASIAIR app was 253 MB, and v1.9 ASIAIR app has bloated to 785 MB.
iMazing works fine on Apple Silicon based Macs; I am running it currently on a Mac Studio (Ultra).
