BTW. Sony released IMX287 - 6.9um 0,4mpix sensor. Will be in Point Grey cameras soon. Kind of a planetary camera for long f-ratio telescopes.

You can look for local metalwork shops. Some astro shops in EU also have some sort of metalworks capabilities - so you can ask them too (Teleskop Austria, Teleskop Express etc.).

New Sony sensor - IMX428

It has relatively big pixels (4.5um), some binning support and other weird things. Could be handy in a camera ;)

I use a Bahtinov mask to focus on a bright star. Then I move to the targeted area and recheck - on few-second exposure. For DS image focusing ability to clip preview image levels is very very handy. Nebulosity has it, don't know if Sharpcap can do it - it allows to see the DS object even on short ex...

Is the preview in color? If not - the image is not "debayered" - turn/displayed as color (this is a color camera so the image look ok in color).

Sony CMOS sensors do not have hardware binning. It's software based.

Nebulosity already has (nearly) everything. I use it for DS imaging since Meade DSI III Pro times ;)

Software development isn't quick nor cheap. If you rush it you will get a terrible UI and unstable operations.
