You've seen out of focus stars produce a doughnut shape, everything that is out of focus will look like this on a scope with a central obstruction. Dust grains in the light path will be out of focus so their shadows will have this doughnut shape also.
Make sure you take the flats just after imaging so the dust shadows in the flats are the same as the light images.
Image calibration will remove them if done correctly.
